My favorite potatoes are made with onion soup mix … have you made these before?

Take some red potatoes, about 4-5 medium size and chop them up.  They can be diced or sliced… it’s up to you.  I’ve been dicing mine, kind of small.

Add some chopped onions to your potatoes, about 1/2 a medium onion.

Add 2 packages of dry onion soup mix.  You’ll find this in the soup aisle at the market in a box.  There are 2 packages in each box.  I like a lot of flavor, so I add both packages.

Add about 2 tablespoons melted butter and toss it all together.

Now, since I have an RV now and an oven … I place them on my baking tray on foil.   You can make these in foil packets and place them on a BBQ too.

I cook mine about 40 minutes at 350 degrees.  I ate them before I remembered to take a picture!  ha ha ..  sorry … I will try and take a “done” picture next time!

If you make yours in foil packets – I like to double up the foil unless you’re using heavy duty foil. I BBQ my potato packets about 30-40 minutes on medium heat. If you fold your foil together so nothing will leak, go ahead and flip once. But … I really like the bottom to get crispy and almost burnt!

So … why do I call them Dinner and Breakfast Potatoes?  Well, I make some extra and keep them in the fridge overnight to heat up for breakfast!  Just warm them up in a pan or in foil over the fire.  Add some eggs and salsa and you’re good to go!
